Whole Grilled Sea Bass
A whole sea bass stuffed with lemon and herbs, grilled directly over charcoal until the skin is crisp and the flesh pulls cleanly from the bone. Simple, fast, and better than any restaurant version.

Grilled Halloumi and Veg Mezze
A full mezze spread from the BBQ: halloumi slices, courgette, aubergine, and peppers all grilled over direct heat and arranged on a platter with hummus, olives and warm flatbreads. A great vegetarian centrepiece or an opener for a longer feast.

Garlic Butter Prawn Skewers
Tiger prawns threaded onto skewers, grilled hard and fast over direct charcoal heat, and basted with a garlic, chilli and lemon butter as they come off the fire. Ready in under 10 minutes — one of the fastest things you can cook on a BBQ.

Grilled Mackerel with Horseradish
Whole mackerel is one of the best fish for the BBQ — oily, robust, and able to handle direct charcoal heat without drying out. Scored and seasoned simply, served with sharp horseradish cream and a watercress salad.

Grilled Pineapple
Pineapple slices grilled directly over charcoal until caramelised and lightly charred. The natural sugars concentrate and the smokiness of the coals adds a complexity that raw pineapple simply doesn't have. A perfect foil for jerk chicken.

Greek Salad
The real thing — chunky, undressed until the last moment, with proper block feta, Kalamata olives and dried oregano. No lettuce. The essential side for any Greek-inspired BBQ night.

Watercress and Lemon Salad
A handful of peppery watercress dressed simply with lemon juice and good olive oil. The sharpest, cleanest side on the table — designed to cut through the richness of oily grilled fish like mackerel.

Chimichurri
The Argentinian herb sauce that belongs alongside any grilled beef. Made with flat-leaf parsley, garlic, red wine vinegar and olive oil — it is sharp, herby, and cuts through the richness of charred meat perfectly.

Salsa Verde
The Italian herb sauce — sharp, green and punchy. The natural partner to grilled fish, roast vegetables, and anything that needs cutting through. Properly made with capers, anchovies and Dijon mustard.
