Plant bare-root bushes in winter, 1.2m apart. Gooseberries prefer well-drained soil and tolerate more shade than most soft fruit. Prune to an open goblet shape, removing crossing branches to allow air circulation — this reduces mildew. Thin the fruit in late May: remove every other berry and use the thinnings for cooking; the remaining fruits will develop to full size. Handle carefully — most varieties are thorny. Feed in late winter with a balanced fertiliser.

Fresh gooseberries store best in the fridge, ideally in a breathable container or loosely covered, where they will keep for up to a week. Avoid washing them until just before use to preserve their shelf life. In BBQ contexts, gooseberries can be used whole on skewers, or crushed into glazes and chutneys that complement smoky flavours. Their acidity cuts through fatty cuts and adds brightness to slow-cooked dishes. Experiment with pairing grilled gooseberries alongside herbs like rosemary or thyme to enhance their aromatic qualities.
