Prepare spinach and garlic
Wash the spinach thoroughly and chop roughly. Finely chop the garlic cloves.
Season and assemble
In a mixing bowl, toss the spinach with olive oil, chopped garlic, salt, and pepper.
Wrap and cook (15 minutes)
Place the spinach mixture on a large sheet of heavy-duty foil. Fold the foil to create a sealed packet. Cook over indirect heat on embers at 180°C (350°F) for 15 minutes until wilted and tender.
Serve
Carefully open the foil packet to avoid steam. Serve warm alongside grilled mains.
