Prepare the vegetables
Begin by preparing your vegetables. Cut the red onions into substantial wedges, ensuring each piece has a bit of the root holding it together to prevent it from falling apart on the grill. Gently wipe any dirt from the chestnut mushrooms with a damp cloth, but avoid washing them as they can absorb too much water.
Assemble the skewers
Take your skewers and begin to thread the vegetables on, alternating between red onion wedges and whole chestnut mushrooms. Pack them together firmly but not so tightly that they won't cook evenly. Once assembled, brush the skewers generously with olive oil and season well with sea salt and freshly ground black pepper.
Grill the skewers
