A classic, simple apple sauce, perfect for accompanying pork dishes.
Prepare the beetroot wedges
Wash the beetroot thoroughly, then cut into even wedges about 2cm thick.
Season the wedges
Place the beetroot wedges in a mixing bowl. Drizzle with olive oil, sprinkle with salt, black pepper, and rosemary if using. Toss to coat evenly.
Cook on the BBQ (40 minutes)
Arrange the wedges on a foil-lined tray or cast iron skillet and place over indirect heat on the BBQ. Cook with the lid closed for 40 minutes, turning halfway, until tender and caramelised.
Serve
Serve warm as a side dish, ideally alongside smoked meats such as Smoked Turkey Breast with Rosemary and Horseradish Cream.
