Prepare the rub and turkey (15 mins)
Mix the chopped rosemary, minced garlic, olive oil, salt and pepper to create a rub. Pat the turkey breast dry and apply the rub evenly all over the meat.
Set up smoker and start cooking (90 mins)
Preheat your smoker to 120°C (250°F) using lumpwood charcoal. Place rosemary sprigs on the coals for aroma. Smoke the turkey breast indirectly until internal temperature reaches 68°C (155°F), approximately 90 minutes.
Rest the turkey (10 mins)
Remove the turkey breast from the smoker, cover loosely with foil and rest for 10 minutes before slicing.
