Prepare the chicken
Combine the ground cumin, coriander, smoked paprika, salt, and black pepper in a bowl. Rub the mixture evenly over the chicken breasts along with the olive oil.
Set up the grill
Prepare the BBQ with a two-zone setup: one side with direct high heat, the other cooler for indirect cooking and resting.
Grill the chicken breasts (10-12 minutes)
Place the chicken breasts over the direct heat and grill for 4-5 minutes on each side until charred and cooked through. Use an instant-read thermometer to check for an internal temperature of 75°C (167°F).
Rest the chicken (5 minutes)
Move the chicken breasts to the cooler side of the grill and rest for 5 minutes to allow juices to redistribute.
