Prepare the Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning. In a large bowl, combine the cubed beef, bell peppers, and red onion. Drizzle with olive oil and season generously with salt and pepper. Toss everything together until well coated.
Assemble the Skewers
Thread the beef and vegetables onto the skewers, alternating between them. Don't pack them too tightly, as this will prevent them from cooking evenly. Leave a small gap between each piece.
Grill the Skewers
Place the skewers on the hot side of the grill. Cook for 8-12 minutes, turning every 2-3 minutes, until the beef is cooked to your liking and the vegetables are tender and slightly charred. If they are colouring too quickly, move them to the cooler side of the grill to finish cooking.
Rest and Serve
Remove the skewers from the grill and let them rest for a few minutes before serving. This allows the juices in the beef to redistribute, resulting in a more tender and flavourful bite. Serve with your favourite sides.
