Prepare the Onions
Trim the root end of each onion so it sits flat, but leave the skin on. Cut a small cross in the top of each onion, deep enough to push a knob of butter into.

Assemble the Foil Packs
Tear off four large squares of foil. Place an onion in the centre of each. Push a knob of butter and a couple of sage leaves into the cross on top of each onion. Season generously with salt and pepper, then wrap the foil tightly around each onion to create a sealed parcel.
Cook the Onions
Place the foil-wrapped onions directly in the hot embers of your barbecue, or on the indirect heat side of the grill. Cook for 25-30 minutes, or until the onions are completely soft when pierced with a skewer. Allow to cool slightly before unwrapping and serving.
