Prepare the Garlic Butter
In a small bowl, combine the softened butter, grated garlic, and chopped parsley. Mix everything together thoroughly until well combined, then season generously with sea salt flakes and black pepper. This is your flavour-packed basting butter, ready for the mushrooms.
Grill the Mushrooms
Carefully place the portobello mushrooms directly onto the hot embers, gill-side up. Allow them to cook for 3-4 minutes, until they start to soften and release some of their moisture. You're looking for a gentle sizzle and the beginnings of a light char on the underside.
Baste and Finish Cooking
Flip the mushrooms so they are now gill-side down. Divide the garlic butter mixture evenly between the mushroom caps, spreading it over the surface. Continue to cook on the embers for another 5-7 minutes, allowing the butter to melt and be absorbed. The mushrooms are ready when they are completely tender and cooked through.
Serve Immediately
Using long-handled tongs, carefully remove the mushrooms from the fire. Serve them immediately while hot, perhaps with a final sprinkle of parsley and a wedge of lemon on the side for squeezing over. They are best enjoyed straight from the fire.
